It’s just about time to fire up the grill, and you know what that means? It means cooking delicious steaks served with tasty sides. However, it’s not always easy to find a great recipe. Here’s one you’ll make time and time again. This bone-in grilled rib eye recipe won’t disappoint.

Not an Ordinary Steak

Whether cooked inside or outside, most people make rib eye the same way. They select the finest cut, sprinkle it with salt and pepper, and then cook it how they like. There’s nothing wrong with that. However, there’s an even better option. One bite, and you’ll never go back to ordinary steak again.

Ingredients

For the tastiest rib eye ever, you’ll need the following ingredients. Although the recipe will serve two, you can always double or triple everything to serve more people.

  • Two 1 1/2-inch thick bone-in rib eye steaks (approximately 1 1/4 pounds)
  • 2 teaspoons coarse kosher salt
  • Black pepper to taste
  • Extra virgin olive oil as needed
  • 2 ounces of creamy blue cheese
  • 1 tablespoon butter (unsalted)
  • 2 teaspoons chives (finely chopped)
  • Hot sauce (optional)

Directions

Now comes the fun part of making magic.

First, season the steaks with salt and pepper. You’ll want to do this anywhere from 30 minutes to one hour before grilling the steak. That way, the seasoning will have time to penetrate the fibers.

Second, cover the steak loosely with plastic wrap, then let it rest at room temperature. In the meantime, turn the grill on high heat.

Please note that if you use a charcoal grill, you’ll want to push the coals to one side. However, with a gas grill, turn on just two burners. In both instances, that’ll prevent you from cooking the steaks over direct heat.

Third, rub a small amount of oil on the rib eyes. When done, place them on the hottest area of the grill. Cover them with an aluminum pan and cook for roughly three minutes on each side. You want to see a golden-brown color. When done, move them to the cooler area of the grill.

Fourth, crumble the blue cheese on the top side of the steaks. Again, cover them and continue cooking for between three and five minutes based on how well you like them done.

Fifth, transfer the rib eyes to a cutting board. After loosely covering them with foil, allow them to rest for 10 minutes.

While they rest, mix the butter, chives, and hot sauce in a small bowl. Just before serving, pour the sauce on top of the steaks.

A Fantastic Meal

At this point, you can serve the side dishes. You might start with a spinach salad made with pecans, strawberries, and a vinaigrette dressing. However, other great choices include twice-baked potatoes, cheesy corn, and fresh green beans cooked with bacon and onions.
