Vegan Roasted Sweet Potato Salad

You can’t have a summertime picnic without a crisp, tasty salad. If you want to pass on the meats for lunch or dinner, load up on this delicious vegan salad. The main ingredient is a hefty helping of sweet potatoes, which come with just 100 calories per serving. This dish requires an oven and 30 minutes of roasting.

Here are the ingredients:

  • 3 sweet potatoes
  • 2 tablespoons of olive oil
  • ½ cup of cilantro leaves
  • 2 tablespoons of taco seasoning
  • 2 bunches of kale with the stems removed, torn into 2-inch pieces
  • 3 green onions, thinly sliced
  • 1 can of drained and rinsed black beans
  • 1 large, sliced avocado

For the dressing:

  • ½ cup of cilantro
  • 3 garlic cloves
  • 3 tablespoons of lime juice
  • ½ teaspoon of sea salt
  • 3 tablespoons of olive oil
  • ½ cup of cashews
  • ¾ cup of water
  • ½ jalapeño
  • ½ avocado

You’ll want to cut the potatoes into 2-inch cubes. Next, toss the potatoes with olive oil and taco seasoning. Put the mixture on a baking sheet and roast in the oven for 30 minutes. Then, blend all the dressing ingredients and toss the rest of the salad ingredients. Enjoy!

Perfect Grilled Cheese

This is a favorite among kids everywhere. However, anyone can enjoy a yummy grilled cheese for lunch or dinner. To begin with, make sure you grill it on low heat. It’s also best to use shredded cheese. Also, make sure you have these ingredients:

  • 8 slices of thick white bread
  • 4 tablespoons of mayonnaise
  • 4 tablespoons of butter (room temperature)
  • 1 pound of cheese

Importantly, you’ll want to choose your favorite cheese. There are plenty of choices. For instance, you could go for Monterey Jack, cheddar, Raclette, or blue. Next, mix the mayo and butter thoroughly. Then, put the sandwiches together by spreading the butter and mayo on one side of each slice. Add ½ cup of grated cheese to the inside of the bread.

Then, you are ready to grill the sandwich on a skillet for about eight to 10 minutes. Watch for the sandwich to turn golden-brown. At this point, your sandwich is ready.
